Eggless Sponge Cake without Oven



      This Eggless Sponge Cake is absolutely Tender and Delicious.. And a Super Hit in my family!!! Here in this recipe am not going to use any Sophisticated Instruments. This cake is made is using a pressure cooker. Generally, Eggless cake often calls for an Acidic ingredient and an Alkaline ingredient. Here Curd acts as the acidic ingredient and Baking soda is the Alkaline ingredient. The Acid and Alkaline ingredients react with each other and produces Carbon-di-Oxide Gas, which in turn gives the bubbly, frothy batter which is important for making airy and super soft cakes. Acidic Ingredients like Lemon Juice, Vinegar, Apple Cider Vinegar, Buttermilk etc can also be used in the place of Curd. Now, let us get into the recipe

Ingredients:

  • Cake Flour (or) All Purpose flour (or) Maida - 1 &1/2 Cups.                                                (Blog Link for preparing Cake Flour - Cake Flour)
  • Curd - 1/2 Cup
  • Oil - 1/2 Cup
  • Fine Sugar (or) Powdered Sugar - 1 Cup
  • Baking Powder - 1 Tsp
  • Baking Soda - 1/2 Tsp
  • Milk - 3/4 Cup
  • Vanilla Essence - 1 Tsp

1 US Cup = 236 ml.

Recipe:

  • Line a 7" Baking pan with parchment paper and grease the sides of the pan with butter or oil.
  • Beat the curd and mix Oil, Sugar, Baking powder and Baking soda into it and combine well with a whisk

  • Let it rest for 10 minutes. 
  • Place a stand inside a cooker and Pre-heat it in High flame with lid closed. You shouldn't use whistle and Gasket. This set-up will act as our Oven to bake the cake.


  • After 10 minutes the curd mixture will be frothy.


  • Add Vanilla Essence and mix well
  • Now add Cake flour and Milk alternatively in batches and mix well. Always finish off the mixing by adding the cake flour finally.

  • After mixing well, the cake batter is ready!
  • Pour the Cake Batter into the prepared Cake Pan.

  • Now the Cooker will be Pre-heated and be ready.
  • Place the Pan with the cake batter inside the Cooker, on top of the Stand and close the cooker. NO whistle ad NO Gasket required.

  • Bake it for 40 to 50 minutes in LOW Flame.
  • Start checking for the done-ness of the cake roughly after 30 to 35 minutes.
  • If you insert a Wooden skewer or Toothpick, it should come out with a very little crumbs sticked to it. There shouldn't be any liquid batter. Cake gets cooked even after removing out of the flame. So do not wait until the Toothpick coming out clean. That means Your cake is perfectly baked and there are chances for the cake to over cook after taking out. So a little crumbs sticking to the tooth pick is the correct stage.
  • My Cake got baked in 50 minutes.
  • Remove the cake from the cooker and let it rest for 20 to 30 minutes

  • Once the Cake is cooled down, insert a knife along the walls of the Pan to separate the cake from the Pan.
  • Invert the Pan and take the cake out of the Pan.
  • The Cake came out well Super Soft and Delicious!!!!


Notes:

  • Using Cake flour will yield soft cakes which will be better than the cakes prepared with normal flour
  • The given ingredients in the recipe will be correct for a 7 inch Pan
  • A Pan with a lid can also be used instead of a Cooker.

  • If you do not have a stand, You can very well use Rock salt or sand. The main motive is to avoid direct contact between the Cooker base and Baking Pan.
  • Dont forget about pre-heating the cooker in HIGH flame and baking the cake in LOW flame
  • This Cake can be eaten as such or can be used as a base cake.
  • This recipe should be easy for anyone to bake a perfect cake. Such a simple, easy recipe. Yet yields a perfect Soft and Delicious cake.
