Cake flour

          Have you ever wondered, Why dont you attain the cake texture similar to the one we get in shops?!! Here is an answer for that... If you want to bake a perfect cake, all you need is cake flour. It can be easily made at home with just 2 ingredients.

Ingredients:

1. All purpose flour - 1 Cup.
2. Corn flour - 1 Tbsp.

Procedure:

          Remove 1 Tbsp of All purpose flour from 1 cup of All purpose flour and replace it with 1 Tbsp of Corn flour. Sieve this mixture 4 to 5 times. This makes the cake flour nicely blended and aerated.

Notes:

1. Shifting the flour multiple times makes the air to get incorporated well in to the flour. So the volume of the flour will increase. So you have to measure the flour again after shifting before using it in the recipe.
2. Cake flour has less Protein content (8-9%) which makes it a weaker flour. In turn, it gives a super soft cake. All purpose flour has more Protein content (10-13%) which makes it a strong flour.

Now you know why cake flour is so important for a perfect soft cake.
