Ridge Gourd Peel Stir Fry - Peerkangkai Thol Poriyal


    Ridge Gourd is a Vegetable with loads of Nutrients. Of course the Peel of the gourd is also loaded with Nutrients. Normally the Peel is thrown out. But the Peel can be used to make variety of Dishes. Now let us see how to make stir fry with Ridge Gourd Peel.

Ingredients:

  1. Ridge Gourd Peel
  2. Onion
  3. Green Chillies
  4. Curry Leaves
  5. Turmeric Powder
  6. Grated Coconut
  7. Coriander Leaves
  8. Salt
  9. Mustard Seeds
  10. Broken Urad Dal

Recipe:

  • Peel the skin of the Ridge Gourd. Take care to wash the Ridge gourd properly. 
  • Chop the peel finely or as desired.
  • Heat oil in a Pan and Temper Mustard seeds and Broken Urad Dal
  • Add the Chopped onion, Curry leaves, Green Chilli and saute for a while
  • When the Onions are well sauted, add the chopped Ridge Gourd Peel.
  • Add the required Turmeric powder & Salt and mix well.
  • Sprinkle a little water and close the Pan.
  • The peel will be cooked in few minutes. 
  • Once the Peel is cooked and grated Coconut.
  • You can also add chopped Coriander leaves.
