Inji Pachadi / Ginger Pachadi

 

  Inji Pachadi is a side dish which goes well with Idly Dosai, rice etc. Also Inji pachadi is taken as a side dish with Tirunelveli Sodhi. This is made of Ginger and Coconut as the main ingredients. Let us get into the recipe

Ingredients:

The below ingredients yields one big bowl of Pachadi. If you are doing for few people half the amount given below. 

1. Ginger - 1 cup
2. Grated Coconut - 1 and a half cup
3. Red chillies - 10 to 15
4. Broken black Urad dal - 2 spoons
5. Asafoetida - half spoon
6. Onion - 1(small)
7. Mustard seeds - a little
8. Broken Urad dal - a little
9. Curry leaves - a little
10. Jaggery - as per taste
11. Salt - as required
12. Water - as required

Recipe:

1. In a small pan, add a little oil and roast the red chillies. Remove from pan once browned.


2. In the same pan, add a little more oil and roast broken urad dal. Saute till it is browned. Add Asafoetida and give a stir. Remove from pan.


3. In the same pan, add a little more oil and saute the chopped ginger pieces. Remove from pan once browned.


4. In the same pan, add the grated coconut and saute till the coconut gets browned. Switch off the flame and Remove from pan.


5. Once all the ingredients are cooled down, grind everything along with required tamarind, salt and water to a smooth paste. This is Thuvaiyal and we can also stop with this.


6. To make Pachadi, In the same pan, heat oil and temper mustard seeds, broken urad dal and curry leaves. Add onions and saute for a while. Add the Inji thuvaiyal and add required water to loosen the thuvaiyal. Let the pachadi boil.
7. Once the pachadi is thickened, add required jaggery and cook for a while. Switch off the flame.
8. Inji Pachadi is ready!!!!

Notes:

1. Inji Pachadi is a must have side dish with Tirunelveli Sodhi. Anyway it goes very well with Idly and dosas too.
2. If you want Inji Thuvaiyal, you can stop with Step No. 5.
3. If you want to use less oil, you can very well dry roast the ingredients.
