Thengai poli is a traditional South Indian Sweet. It is also called as Oppatu. It is kind of stuffed paratha, while the stuffing is made with coconut & Jaggery and the paratha is made with Maida. Let us get into the recipe.
Ingredients:
For Dough:
1. Maida - 1 cup
2. Salt - a pinch
3. Turmeric - a pinch
For Stuffing:
1. Coconut - 1 cup
2. Jaggery - 1 cup
3. Cardamom powder - few pinches
Recipe:
To make Dough:
Make a dough with maida, salt and turmeric with water. Knead the dough into a soft pilable dough. Close the dough. Rest the dough while making the Stuffing.
To make Stuffing:
Heat a tawa, add few drops of water and 1 cup Jaggery in it. Dissolve the jaggery. If it has impurities, filter it and add the solution again to the tawa. Add the grated coconut in it and saute the mix. Add the cardamom powder and keep stirring. The mix should become thick but not hard. You should be able to make a soft ball out of it. Allow the stuffing to cool.
To Roll out Poli:
1. Take a ball from dough. Press the ball into a small round. Place a small ball of stuffing on the small round and close the stuffing by wrapping the flattened dough from all sides. Pull out the extra dough.
2. Now close the flattened dough and make it as a ball. Dust the ball with little flour and flattened the ball into a small round.
3. Do the same with the rest of the dough and stuffing.

Usually the Poli is flattened by fingers by applying ghee or oil. But by doing this way mentioned above, I felt it is very easy and less messy. Believe me there is no compromise in the taste as we r going to cook the Poli by applying ghee finally.
