Cream of Broccoli Soup is super Creamy and super Delicious!!!! The Butter and Cream gives rich taste to the soup. This Soup can be served as a Dinner. Let us get into the recipe.
Ingredients:
1. Broccoli florets - 2 cup.
2. Onion - 1/2
3, Garlic pods - 3
4. Butter - 3 Tbsp
5. Heavy/Light Cream - 1/2 cup
6. Milk - 1 1/2 cups
7. All purpose flour - 3 Tbsp
The above ingredients serve 2 to 3 people.

1. In a Pan, heat 2 Tbsp of butter and saute Garlic and Onion for a minute.
2. Add Broccoli florets and saute again for a minute.
3. Add water, close the pan and cook for 6 to 7 minutes. Do not over cook the broccoli. The colour of the broccoli should be retained.
4. Once cooked, cool down the ingredients and grind the mixture into a paste. Retain the water used for cooking to be used later in the soup. Also retain few Broccoli florets to be added in the soup while the soup is boiling. This gives additional cruchiness to the soup.
5. Meanwhile, mix All purpose flour, Cream and Milk well.
6. In the same pan, heat 1 Tbsp butter and add the Broccoli paste, Water used for cooking, All purpose flour mixture and let everything boil by adding required salt.
7. Add Pepper powder and mix well.
8. Once it is boiled, switch off the flame. Cream of Broccoli Soup is ready!!!!
Notes:
1. If you prefer to avoid cream, Just skip the cream and increase the amount of milk used.
2. The total cooking time is around 30 to 40 minutes.
